Catfish Salad

Give that canned tuna the boot! Try our healthy catfish salad instead.
     
3/4 cup Low-fat ricotta cheese
1 tablespoon lemon juice
1 1/2 cups chopped cooked catfish (about ½ pound)
1/4 cup finely chopped celery
2 tablespoons finely shredded carrot
2 tablespoons low-fat ranch salad dressing
    Salt and pepper, to taste
6  whole wheat hamburger buns
6  tomato slices
1 1/2 cups shredded lettuce
 
1. Place cheese and lemon juice in a blender. Cover and blend for about 30 seconds or until smooth.
2. Mix cheese mixture, fish, celery, dressing, salt, and pepper. Place ½ cup fish mixture on each bun bottom, and add tomato and lettuce. Top with bun top.
Serves 6.
 
Notes:
This catfish salad is wonderful served on buns, or on whole-grain crackers.

You may want to add one or more of the following to spice up the flavor:
Dijon mustard on the bun, a slice of cheese with the tomato and lettuce, a bit more ranch dressing on the bun, sliced green onion to the salad
