Oven Baked Catfish Cakes with Lemon Caper Sauce
1 lb. U.S. Farm Raised Catfish Fillets – cooked
1-1/2 cup Mashed Potatoes
2 Tablespoons Lemon Caper Sauce*
1 teaspoon Chopped fresh Parsley
1/4 cup Diced Red Onion
1/4 cup Diced Red Bell Pepper
1-1/2 Tablespoons Savory Salmon Seasoning*
1/4 cup Olive Oil
1 cup Seasoned Bread Crumbs
- Mix together all ingredients, except the olive oil and the bread crumbs.
- Shape into equal size cakes.
- Coat cakes with breadcrumbs.
- In a heated skillet brown cakes in the olive oil approximately 2 minutes on each side.
- Transfer the catfish cakes to a greased baking sheet and [place into a 350°F (180°C) preheated oven for 15 minutes.
- Remove the catfish cakes from the oven and place them on a serving dish. Garnish with Lemon Caper Sauce and fresh lemon wedges.
Yield: 4 servings
