Southern Style Sweet Bourbon Glazed Catfish

Southern Style Sweet Bourbon Glazed Catfish With Toasted Pecans1/4 cup Fishermans Choice Breading * or seasoned cornmeal
2 Tablespoons Chef Ivo’s Seasoning Salt * or your favorite seasoning blend
2 U.S. Farm Raised Catfish Fillets
3 to 4 ounces good quality frying oil
4 ounces (½ cup) Sweet Bourbon Glaze *
1/2 cup fresh pecans (optional)

  1. Place breading into shallow dish, mix in seasoning salt. Coat fillets well. Shake off extra.
  2. Place a large saute pan over medium heat, add frying oil. When hot, carefully place in oil the catfish fillets skin side up. Cook approximately 3 to 4 minutes. Turn fillet’s over and cook for 2 minutes more. Catfish is done when it flakes easily with a fork. Remove fillets to serving platter.
  3. Place fresh pecans into hot oil and toast approximately 1 to 1-1/2 minutes. Using a slotted spoon remove the pecans and spoon over the fillets.
  4. Discard hot oil and return pan to high heat. Pour in Sweet Bourbon Glaze. When hot pour over catfish fillets.
