Southern Style Sweet Bourbon Glazed Catfish
1/4 cup Fishermans Choice Breading * or seasoned cornmeal
2 Tablespoons Chef Ivo’s Seasoning Salt * or your favorite seasoning blend
2 U.S. Farm Raised Catfish Fillets
3 to 4 ounces good quality frying oil
4 ounces (½ cup) Sweet Bourbon Glaze *
1/2 cup fresh pecans (optional)
- Place breading into shallow dish, mix in seasoning salt. Coat fillets well. Shake off extra.
- Place a large saute pan over medium heat, add frying oil. When hot, carefully place in oil the catfish fillets skin side up. Cook approximately 3 to 4 minutes. Turn fillet’s over and cook for 2 minutes more. Catfish is done when it flakes easily with a fork. Remove fillets to serving platter.
- Place fresh pecans into hot oil and toast approximately 1 to 1-1/2 minutes. Using a slotted spoon remove the pecans and spoon over the fillets.
- Discard hot oil and return pan to high heat. Pour in Sweet Bourbon Glaze. When hot pour over catfish fillets.
