Spicy Asian Pear Catfish with Stir Fried Vegetables
3 - U.S. Farm-Raised Catfish Fillets
3 Teaspoons Asian Pear Rub *
1/4 cup Spicy Asian Honey Marinade *
4 Tablespoons olive oil
1 cup sliced mushrooms
1 cup snow peas
1 cup bias cut celery (thin)
1 cup sliced bell peppers
1 cup bean sprouts
Corn starch
Cooked rice or noodles for serving
1. Cut catfish into bite size chunks. Place in a shallow dish and dust with Asian Pear Rub and drizzle with ½ of the Spicy Asian Honey Marinade. Let rest for 10 minutes to marinate. Then drain and save the liquid.
2. Heat a large skillet or Wok over high heat for approximately 2 minutes. Add olive oil. Add vegetables and stir fry approximately 2 to 3 minutes. Remove with a slotted spoon and keep warm on the side.
3. Quickly add catfish to the hot skillet and stir fry 1 to 2 minutes.
Add the vegetables. Take the reserved liquids and marinade and mix in approximately 2 teaspoons of corn starch until there are no lumps. Add to the stir fry. Sauce will become thick in approximately 1 to 2 minutes.
4. Remove from heat, plate with your choice of rice or noodles.
Yield: 4 to 6 servings
